I’m spending the next month in Long Island, New York to get a healthy routine going again, and stay within one timezone! So be prepared for a bunch of posts over the next month as I share my progress, my favorite meals, and even some pictures of me doing some downward dog! Enjoy this recipe of one of my favorite salads from the past week — it’s made from plants and it’s delicious.
I tried this recipe for the first time four years ago, and it remains a consistent favorite in my kitchen. I’ve used it in many different capacities — I’ve brought it to big potlucks, I’ve made it on Sundays so I had healthy lunch on hand for the next four days, I’ve made an entire thing and split it with my husband in one sitting, and with this salad, I finally convinced my meat-loving uncle that quinoa really IS delicious. Enjoy this simple, fresh and delectable 5-step recipe.
It’s finally nice enough to start grilling (and eating) outside, and we can soak up some much needed sunshine. And I am all about picnics and the backyard barbeque spread: burgers, potato salad, watermelon, corn on the cob, baked beans, and chips! But those things aren’t always the healthiest, especially the potato salad. Well, that’s about to change! Introducing The Best Vegan Potato Salad.
This is a take on one of my favourite salads! I always love to add one type of fruit and one type of nut into my salads such as strawberries, mangoes, apples or pears with almonds, macadamias, walnuts or any other variety you desire, this gives it great flavour and texture and mixes it up and makes for a more interesting tasty salad or in this case a great smoothie.
