Meatless Monday: Citrus Kale Salad

I came up with a DELICIOUS kale salad, perfect for this time of year: Citrus Kale Salad. This really was so refreshing and tasty! Besides the health-appeal of this salad, the other thing that makes it so special is that it keeps super well. The kale stays crisp and bouncy and the salad was just as good 3 days later as it was on its original debut.

Meatless Monday: Calienté Coco Smoothie

How did you celebrate Cinco de Mayo? I decided to put a healthy and spicy spin on the traditional Mexican drink, Horchata, that is typically made with rice and milk. The results? A delicious, rich and chocolatey smoothie that will be tasty all year round.

Meatless Monday: Saffron Sweet Potato & Rainbow Quinoa Soup

Spice up your dinner tonight with saffron. It is the most expensive spice in the world as each stigma needs to be hand-picked from every flower, it is used in cuisine for its light flavor and golden yellow color, and it has a long medicinal history as part of traditional healing. Studies indicate its benefit for cancer-suppression and prevention, immune-modulating, and antioxidant properties.

Meatless Monday: Avocado Cream of Mushroom Soup

I love avocados more than anything. I eat a whole one every day (not in one sitting but throughout the day an entire avocado is definitely consumed). I use them to make creamy sauces, indulgent raw chocolate mousse, and always in salads. I had never tried avocado in my homemade soups until now. Using the avocado as this soup’s base made it so rich, creamy, satisfying and delicious. Who needs Cream of Mushroom Soup with heavy white cream and butter when you can have this vegan delight instead?

Meatless Monday: Lentil and Butternut Squash Curry

Easily cooked in a large stovetop pot or in a slow cooker, this is a nice warming meal with plenty of high anti-oxidant spices which have been shown to have anti-cancer benefits. The curry is also rich in carotenoids which are vital for a healthy immune system, healthy skin and eyes and it also contains plenty of minerals such as magnesium, calcium and iron, fiber and protein.
