At Reboot, we are constantly reminding you to consume plant-based foods that are the colors of the rainbow. This week it’s a glowing orange! Maybe a little greenish-orange depending on the size of your carrots and green peppers used but still just as healthy and beautiful.
I might be the type of person who tends to use superlatives or excess exclamation points but trust me when I tell you, the ‘BEST’ salad in NYC happens to be the Roasted Carrot and Avocado salad from ABC Kitchen. (They also have juices on the menu!) The roasted spiced carrots mix so well with the creamy avocado and the seeds and sprouts give a great texture. I loved this salad the first time I tried it, and now, it’s impossible for me to go to this restaurant without ordering it. Super foods are foods that are higher in nutrients per calorie than other foods and are blessed with scientifically proven health benefits. The list of “super foods” gets longer and more exotic every day – Peruvian maca maca fruit, Chinese hemp seeds, Tibetan gogi berries, acai and camu camu berries, amaranth and quinoa. These items can be expensive or hard to find. Meanwhile, there are many other easy to grow, easy to cook, easy to juice or to eat. Ingredients 2 beets (Australian beetroot) 2 organic carrots 1 cup organic strawberries 6-8 kale (Australian tuscan cabbage) leaves/2 cups Directions Wash all produce well. Cut as needed to fit into juicer. Juice. Pour over ice and enjoy!
Ingredients 2 Fennel Bulbs 6 Carrots 1 Tbsp Fresh Lemon Juice 1 Tbsp Red Wine Vinegar 2 Tbsp Olive Oil 1/2 cup Pitted Olives (Green or Kalamata) 1/2 cup Sliced Sundried Tomatoes Fresh Parsley or Cilantro (Australian Coriander) Directions Use Mandoline to shred Fennel and Carrots (Thinly slice if you don’t have a mandoline). Place in large bowl. Mix all lemon juice, vinegar, oil and olives together and add to carrots & fennel. Add in Sundried Tomatoes and Parsley or Cilantro (Australian Coriander)
Ingredients 2 large Carrots 4 stalks Celery 1/4 large Cucumber 1/2 cup Broccoli florets 1/2 cup Cauliflower florets Directions Cut carrots, celery, cucumber up into stalks. Ingredients 1-4 fennel bulb(s) depending on size 2 lbs. carrots 1 celeriac 4 scallions (Australian shallots) 2 leeks 1 onion 4 garlic cloves Ginger – 2 inch chunk, finely chopped Fresh herb bouquet — tied together with twine (I use: dill, savory and sage) 2 tbsp olive oil Vegetable broth Directions Finely chop onion, leek, scallion (Australian shallots), and garlic. Peel celeriac and carrots, cut these and fennel into 1 inch chunks. Heat olive oil in soup pot over medium heat; Add Onion, Leek, Scallion and Garlic — Cook until soft, about 8 minutes.
