I haven’t always been partial to beets, in fact my stance for the first 20 years of my life was that a palate was better served without them (and I wonder where my youngest son Bode gets his food opinions from?!?!). Apple-Carrot-Beet (Australian Beetroot) – Juice

Ingredients   2 Apples 4 Carrots 2 Beets (Australia beetroot) 6 leaves swiss chard – 1.5 cup (Australia silverbeet) 1” ginger root (1 tablespoon)   Directions Wash all produce well Juice Pour over ice Enjoy!

Ingredients 1-2 wedges purple/red cabbage 1 beet (Australian beetroot) 2 carrots 1-2 apples (try organic fuji for a sweet flavor) squeeze of lemon   Directions Juice, pour over ice and enjoy!

Dracula’s Dream Juice

Ingredients 2 beets (Australian beetroot) 2 organic carrots 1 cup organic strawberries 6-8 kale (Australian tuscan cabbage) leaves/2 cups   Directions Wash all produce well. Cut as needed to fit into juicer. Juice. Pour over ice and enjoy!

Roasted Beet (Australian Beetroot) Salad
