Today is the first annual National Kale Day. Naturally, we are celebrating here at Reboot by filling our bodies with, you guessed it, lots of kale (Tuscan cabbage)! Some of us are even wearing green. We love kale and think it’s important to celebrate because it is a wonder food! While all vegetables are good for you, kale has the highest vegetable source of vitamin K and may help the risk of developing certain cancers and other diseases. It’s a fantastic source of calcium, chlorophyll, calcium, iron, and vitamins A and C. It’s super low in calories and yet incredibly dense with nutrients. It’s also a good source of minerals, copper, potassium, iron, manganese, and phosphorus, as well as compounds which promote eye and skin health. And the best part about it, is it tastes delicious! Even if you don’t think you’re a fan, there are many different ways you can bring kale into your life, and actually enjoy it.
