Coconut Curried Sweet Potato – Veggie Dish

Ingredients 1 medium sweet potato, washed and peeled 1/2 cup coconut milk 1 small clove garlic, finely minced 1/4 teaspoon fresh ground black pepper 1/8 tsp ginger (or 1/4 tsp fresh mined) 1/8 tsp turmeric 1/8 tsp cilantro (Australian coriander) 1/8 tsp cumin   Directions Preheat oven to 450 degrees Wash and peel sweet potato. Pierce with fork. Bake sweet potato 45-60 minutes or until tender Remove skin and place into bowl Add coconut milk and spices Mash well and stir

Jamin’s Superbowl Raw Slaw – Veggie Snack

Ingredients 2 Fennel Bulbs 6 Carrots 1 Tbsp Fresh Lemon Juice 1 Tbsp Red Wine Vinegar 2 Tbsp Olive Oil 1/2 cup Pitted Olives (Green or Kalamata) 1/2 cup Sliced Sundried Tomatoes Fresh Parsley or Cilantro (Australian Coriander)   Directions Use Mandoline to shred Fennel and Carrots (Thinly slice if you don’t have a mandoline). Place in large bowl. Mix all lemon juice, vinegar, oil and olives together and add to carrots & fennel. Add in Sundried Tomatoes and Parsley or Cilantro (Australian Coriander)

Mustard Braised Brussels Sprouts – Veggie Dish

Ingredients 1 pound brussels sprouts 2 tablespoons olive oil Sea salt Freshly ground black pepper 2 cups vegetable broth (you can use homemade juice-pulp broth) 2 to 3 scallions (Australian shallots), peeled and thinly sliced 2 tablespoon smooth mustard (Dijon, or other favorite mustard) 2 tablespoons chopped flat-leaf parsley (optional)   Directions Trim sprouts and cut in half. In a large pan, heat olive oil over medium heat. Arrange sprouts, cut sides down, in one layer. Sprinkle with salt and pepper, to taste. Treating Yourself Well

For many of us growing up, “treats” were our go-to rewards for good behavior from our parents: A lollipop after a doctor visit, a slice of sugary cake for turning another year older, a few cookies if we ate our vegetables with dinner. As adults, this reinforcement of “naughty” foods continues: an alcoholic beverage (or three) after hard day at work, a pint of ice-cream to get through a difficult break-up, fried just-about-anything to support our favorite sports team on television. The side affect of this junk-food-as-a-reward mentality is that we start to look at “health” foods as boring necessities instead of the nutritious (and delicious!) foods our body truly craves.
