Thyroid-Friendly Pear & Chard Smoothie

Chard (silverbeet) is in season right now and it’s both delicious and packed with nutrients like energizing b-vitamins, iron, and electrolytes like potassium and sodium. In addition to the electrolytes in the chard, the coconut water in this smoothie is also a rich source of potassium and a little bit of sodium, both electrolytes that can be lost through sweat on hot summer days. So in short, this smoothie is an electrolyte power-house! Chard is also a non-goitrogenic green, meaning it’s good for anyone with a thyroid condition, so this smoothie is a good choice in replacement of a smoothie containing goitrogenic greens like kale and also because it’s lower in sugar. Try serving this smoothie at your next get-together or as a meal or snack replacement. You can even use this smoothie as a post-workout recovery drink because on top of the electrolytes in this smoothie, dark green leafy vegetables like chard also contain some plant-protein.

 

 

 

Ingredients

  • 1 cup (250 ml) coconut water
  • ½ cucumber
  • 1 pear, cored
  • ½ lemon, peeled
  • 1 handful of chard (silverbeet)
  • 1-inch (2.5 cm) ginger

Directions

  1. Wash and prepare all produce.
  2. Add ingredients to blender and blend on high for 45-60 seconds until smooth.
