Sun-dried Tomato Dressing

Made with just 5 simple ingredients, plus some seasoning, this sun-dried tomato dressing will add a delicious Italian flavor to any salad. Want to lower the fat content? Simply swap the 1/4 cup of olive oil with water and you’ll still have a great-tasting dressing. Want a little more spice? Add a sprinkle of red pepper flakes to your dressing. Enjoy!


  • 1/2 cup sun-dried tomatoes
  • 1 clove garlic
  • 1 bunch basil
  • 1 tbsp lemon juice
  • 1/4 cup olive oil
  • Sea salt & fresh ground pepper, to taste


  1. In a blender, combine the first four ingredients.
  2. With the blender running, slowly add the olive oil.
  3. Season to taste with salt and pepper.
  4. Add more lemon juice if needed.
  5. Stays good up to 1 week in the refrigerator.
