Spicy Jicama Fries

Move over sweet potato fries, there’s another root vegetable you can pair with veggie burgers now. Meet jicama, a root vegetable native to South America full of prebiotic fiber. It’s pronounced HEE-Kah-mah. This low-carb root has amazing health benefits such as weight management, boosting immunity (thanks to its high levels of vitamin C), increasing circulation, lowering blood sugar and boosting brain function. While you can enjoy it raw, you can also bake up these fries and add a little spice.

Ingredients

  • 1 large jicama, peeled and sliced into thin wedges (or buy it pre-sliced)
  • 1 tbsp olive oil or avocado oil
  • 1 tsp chipotle seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Directions

  1. Preheat oven to 425F (215 C).
  2. Place jicama in a bowl, add oil and spices, and toss to coat evenly.
  3. Spread the fries on a baking sheet lined with parchment paper, giving them space so they cook up crispy.
  4. Bake for about 20 minutes, take them out of the oven and flip, and bake for another 20 minutes or until fries are a little brown.
  5. Serve with this Easy Guacamole recipe.
