I was loving the look of the red kale in the markets so I had to grab a bunch to juice and cook with this week. Kale and other cabbage family vegetables contain a naturally occurring compound called sulforaphane which has potent anti-cancer properties and it also aids in liver detoxification pathways. Kale is an excellent source of minerals, vitamin A, K and anti-oxidants. Enjoy!
