Cool Green Summer Soup

Some of you have recently requested some cool summer soups for their eating and juicing Reboot so I thought I would add to our recipe collection so people can enjoy the goodness of a green nutrient dense savory soup while enjoying a cooling meal with plenty of flavor! This is actually the easiest soup I’ve ever made.

 

 

 

 

Ingredients

  • 2 cups of mixed leafy greens
  • 4 scallions (shallots)
  • ½ cup broccoli florets
  • 1 handful of cilantro (coriander)
  • 2 tbsp lemon juice
  • 1 cup (250 ml) cold water
  • ½ tsp sea salt or to taste
  • ground pepper
  • pinch of cayenne (optional)
  • 1 avocado

Directions

  1. Wash all produce well.
  2. Chop vegetables roughly.
  3. Add all ingredients into a high powered blender, blend until desired consistency is formed.

  • Mixed leaves – zucchini, cucumber
  • Scallions – red onions
  • Broccoli – fennel, zucchini, cucumber
  • Cilantro – parsley, mint
