Arugula (Australian Rocket) Spinach Salad

Ingredients:

  • 2 cups arugula (Australia rocket)
  • 2 cups spinach
  • 1/3 avocado
  • 1/2 cup thinly sliced red onion
  • 1/2 cup chopped tomato (heirloom in the summer)
  • 1/2 cup jicama (Australia yam bean)

Directions:

Wash all produce well.  Once chopped, mix in large bowl and finish by adding your favorite Reboot Dressing.
