Smart Sweet: Almond Butter Chocolate Fudge

I was inspired to create this recipe when I needed to find a “healthy sweet treat”. I find it is better to create healthy alternatives of the foods you love most, rather than giving them up completely. I love this recipe because not only does it satisfy my craving for sweets, but with the cacao powder and almond butter you are able to get an anti-oxidant and protein fix, plus no added sugar makes it a perfect dessert. Since it is quite rich you will only need a small amount and can keep that overeating at bay.

Ingredients

  • 2 cups (500 g) almond butter
  • ¼ cup (25 g) cacao powder
  • ½ cup + 2 tbsp maple syrup (Maple syrup is heated so it is not considered completely raw)
  • 1 heaping tsp coconut oil (heaping)
  • 1 tbsp vanilla extract
  • 1 tsp sea salt
  • Optional: ½ cup 80% or more dark chocolate, melted with 1 teaspoon of coconut oil to drizzle on top

Directions

  1. Combine the first 6 ingredients in a large bowl and stir well.
  2. Spoon mixture into a square baking pan, lined with parchment paper or plastic and flatten well.
  3. Place the pan in the freezer and chill for an hour.
  4.  Take the fudge out of freezer and flip out of pan. Cut into squares.
  5. Place the squares on top of plastic or parchment paper. Optional: Drizzle with the melted chocolate.
  6. Sprinkle with a little sea salt if desired.
  7. Place back in the freezer to cool before serving. Store in the freezer in an airtight container.
