Chef Matteo’s Winter Kale Salad

Chef Matteo’s Winter Kale Salad is perfect for cold months since it fills your body up with an abundance of nutrients, healthy fat, and a hint of natural sweetness.
Ingredients:
1 bunch green curly kale, peel leaves off the stem into bitesize pieces
1 avocado
2 Tbsp. olive oil
2 Tbsp. lemon juice
Sea salt & black pepper, to taste
1 carrot, chopped or julienned
1/4 cup raisins
2 Tbsp. sunflower seeds
Directions:
1.) Add kale, carrots, raisins and sunflower seeds to large salad bowl.
2.) Add avocado and mix together using hands, making sure everything is coated evenly.
3.) Add olive oil, lemon juice and sea salt and pepper to taste.
4.) Toss together and enjoy!



Great salad
I first saw this salad made by Rip Esselstyn, founder of the Engine 2 diet. I love it! I add Italian tuna in olive oil, black olives, sliced radishes, quartered artichoke hearts and sliced red onion to mine.
I loved this salad! I was pleasantly surprised. I have never had kale raw, but I love it cooked, so I figured I’d try it out. It made for a lovely lunch. I did add some sliced ham for extra protein.
YUM!! i eat Kale salads several times a week. not because it’s good for me but because I’m ADDICTED!!! try adding chia seeds, goji berries, and pistachios

I just made it for lunch and eating it right now! YUM!!
Easy to make and tasted great. Turned it into our main meal by adding a warm chicken breast (no skin).
