When I think of summer I think of two of my favorite foods that I used to snack on while at the beach: watermelon and peanut butter & jelly sandwiches. So, when I was coming up with a smoothie to have for lunch the other day, I thought…why not try to combine my summer favorites into one glass?! It was risky, but it was worth it, because it is oh so delicious. The sweetness of the watermelon combined perfectly with the saltiness of fresh peanut butter, just like a PB&J! Take this smoothie with you to the beach this summer to stay hydrated, filled up on protein and energized to tackle the waves!
- 1 cup (150 g) watermelon chunks
- 1/2 cup (85 g) pineapple chunks
- 2 tbsp all natural peanut butter
- 1/2 cup (240 ml) unsweetened almond milk
- 1 large handful spinach
- 1/2 frozen banana
- Ice, as needed
- Add all ingredients in high-powered blender and blend until smooth, about 45 – 60 seconds.
- Serve and enjoy.
