Fast & Easy Sweet Potato Avocado Salad

Go ahead and cross off your “I don’t have enough time to eat healthy” excuse. In less than 20 minutes, you can have an awesome, plant-based, filling salad that is not only hearty and delicious, but also complete and balanced. It  features a salad dressing that you can use on a wide variety of recipes, and it’s only three simple ingredients that you probably already have in your kitchen. The combination of mashed sweet potato, healthy fat avocados and a sweet crunch from the apples is the ideal meal. Need a little more protein? Feel free to add a small portion of organic chicken or wild fish!



  • 2 cups (60 g) spinach
  • 1 sweet potato
  • ½ avocado
  • 1 apple, chopped


  • 3 tbsp olive oil
  • 1 tbsp stone ground mustard
  • sea salt and pepper, to taste


  1. Wash all produce well.
  2. Slice the sweet potato and punch small holes into each circle. Microwave for 7 minutes until tender then mash with a fork.
  3. Cube the avocado and apple.
  4. In a large bowl combine spinach, avocado, apple and mashed sweet potato.
  5. In a small bowl, mix together the ingredients for the dressing.
  6. Pour the dressing over the salad and mix together well with salad tongs or fork so that the leaves are well coated with the dressing.
  7. Serve salad and enjoy!
