Cool Green Apple Juice

Go ahead and cool off with this low sugar, refreshing juice that’s ideal for anyone who is watching their blood sugar. This juice is also great for those who need to modify their raw cruciferous veggies intake (kale, Brussels sprouts, cabbage) if juicing for thyroid health, as it contains arugula instead of a cruciferous green vegetables. Enjoy this juice on a warm summer day, in place of a snack or as part of a meal.

Ingredients:

  • 1 ½ apples
  • 1 handful of arugula (rocket)
  • ½ cucumber
  • 3 celery stalks
  • 1 zucchini (courgette)
  • 1 in (2.5 cm) piece of ginger

Directions:

  1. Wash all produce well.
  2. Add ingredients through the juicer, start with the apple, then the ginger and arugula, and finish with the celery, cucumber and zucchini.
  3. Serve and enjoy!
