Thyroid-Friendly Greens and Carrot Juice

Made with loads of seasonal and fresh summer produce, this juice is so refreshing. Seasonal produce is at it’s height when it comes to nutrients. That’s because it’s picked closer to the time you eat it. And it tends to be a little bit less expensive as well!

This juice contains green leaf lettuce, parsley and cilantro; all are safe for anyone with thyroid issues to consume, and these greens and herbs are also loaded with healthful nutrients. Parsley is known for helping the liver to produce detoxifying enzymes; green leaf lettuce is rich in vitamins A and C as well as fiber. Cilantro also contains vitamins A and C, but it also contains the key nutrients lutein and zeaxanthin that have been found to help prevent age-related macular degeneration.

Ingredients

  • 1 apple, cored
  • 1 handful green-leaf lettuce
  • 3 to 4 sprigs each cilantro and parsley
  • 4 carrots
  • ½ lime, peeled
  • 1-inch piece of ginger

Directions

  1. Wash and prepare produce: Core the apple and peel the lemon.
  2. Add ingredients through the juicer.
