Thai Infused Vegetable Broths – Recipe of the Week
This is a take on the warm up with juice - vegetable pulp broth. You can have this broth while you are completing a juice only Reboot or as a stock base for other Thai flavored recipes. The herbs and spices, chilli, garlic, coriander and lemongrass are great detoxifying and metabolic agents to support a Reboot program.
I made two versions of this broth, one a slowly simmered vegetable broth and the other a warmed Thai infused coconut water. One with the vegetable pulp from your vegetable juices or just with coconut water for a quick warm high electrolyte rich drink while on your Reboot when you feel like something warming with the extra spice kick.
Thai Infused Vegetable Broth
Ingredients:
2 Cups of vegetable pulp
6-8 Cups of water
2 sticks of Lemongrass, chopped finely
2 cloves garlic, crushed
Fresh coriander, chopped
Salt and Pepper
1-2 chilli’s, chopped (optional)
Directions:
Boil water in pot, turn down heat and add pulp.
Add lemongrass, garlic, coriander, chilli, salt and pepper.
Simmer for 2 hours covered.
Strain with a fine mesh colander over a bowl.
OR
Thai Infused Coconut Water:
1 Cup of Coconut water
1/2 stick lemongrass, chopped
1 clove of garlic, crushed
Fresh Coriander, chopped
Sprinkle of vegetable stock powder
1 chilli (optional), chopped
Salt and pepper to taste
Directions:
Simmer all ingredients in a small saucepan.
Simmer for 20-30 mins covered.
Strain with a fine mesh colander in a cup or mug.

lemongrass and fresh coriander not available here..what could i substitute for them in the broths[thai]

You can include dried or bottled lemongrass this is found in most asian sections and dried coriander can be found in the dried herb section! Let me know if you have trouble with these options!

I’m not sure how other cut cost, but this is what has worked for me. I use a juicer for my juices, so I have a significant amount of “fiber” thats left over. While I’m cleaning my juicer I put the left over fiber into my blender and a little water. Its a grainier juice but it stretches my juices atleast 80%. Also, I have located cheaper produce markets in my area to get my fruits and vegetables from. I was able to purchase a weeks worth of juicing ingredients at a local non traditional producer for $15! A HUGE savings from the first week which was about $65! Hope this info helps you out!
