Summer produce is vibrant and fresh but sadly the season is winding down in many regions. I love fresh juice and I’m often looking for a great tasting veggie-heavy option. This mostly-veggie (lime is the only fruit!) gem is full of health promoting antioxidants in the carotene family thanks to the red pepper and carrots. Lime not only adds a great flavor but phytonutrients with metabolism and immune supporting actions, like vitamin C, limonoids and even has some calcium. Enjoy while you still have access to these seasonal veggies.
- 2 carrots
- 3 celery stalks
- 1/2 red bell pepper (capsicum)
- 1 lime
1. Wash all produce.
2. Peel lime (optional).
3. Juice all ingredients well and enjoy!
- Carrots – sweet potato
- Celery – cucumber
- Red pepper – green, orange or yellow pepper, tomato
