In the Reboot Kitchen: Sweet Potato Pie Smoothie

Smoothies are one of my favorite, quick, easy and super healthy breakfasts to help get my family out the door on time in the mornings.  Last night we ate sweet potatoes with our dinner so I saved one to use in this morning’s smoothie.  This creamy and nourishing smoothie is packed with nutrients that are perfect for supporting an active lifestyle or for post-workout.

Sweet potato and banana are rich in potassium, an important electrolyte plus the sweet potato’s orange color lets us know it’s a powerhouse for the antioxidant beta-carotene.  Chia seeds provide protein, fiber and anti-inflammatory omega-3 fats.  Combined, this deliciously sweet smoothie can help ease muscle cramps and fatigue.  It also makes for a tasty dessert – try freezing into popsicles or a glass container to enjoy as a frozen treat for hot summer days!

Ingredients

  • 1 small sweet potato
  • 1/2 banana
  • 1/2 tsp (2.5 ml) cinnamon
  • 1 tsp (5 ml) vanilla
  • 1 tsp (5 ml) honey
  • 1 tbsp (3.5 g) chia seeds
  • 1 cup/8 oz (250 ml) coconut milk, unsweetened
  • Ice

Directions

  1. Wash and Bake sweet potato at 425 F/218 C for 40 to 60 minutes or until tender.
  2. Let sweet potato cool or cook the night before and let chill in refrigerator overnight.
  3. Peel banana.
  4.  Add 1/2 banana, sweet potato, vanilla, cinnamon, honey, chia seeds, coconut milk and ice to blender.
  5. Blend until smooth, about 45 – 60 seconds and pour into glass.
  6. Sprinkle with cinnamon and chia seeds.
  7. Serve and enjoy!
