Strawberry Coconut Avocado Smoothie

When I think of a Mexican fiesta I think of a few of my favorite things…strawberry margaritas and guacamole! Those inspired me to make this this refreshing and delicious smoothie on Cinco de Mayo – and they contain the colors of the Mexican flag — red, white and green! This is a great source of heart-healthy fats and is also packed with immune-boosting properties thanks to the avocado and vitamin c in the strawberries. Immune-boosting properties play a great role at this time of year when it comes to helping fight off allergies, runny noses and seasonal colds. This smoothie is well-balanced and can help to keep you full throughout the day if you drink it for breakfast or at any time of the day to power you through until you next meal or snack. If you want to enjoy a margarita today, go for it, but think about waking up tomorrow with this to fill your body back up with these red, white and green nutrients.


Ingredients

  • 12 fresh or frozen strawberries
  • 1/2 avocado
  • 2 tbsp coconut flakes or fresh coconut flesh
  • 1 1/2 cups unsweetened almond milk (substitute coconut, rice, or hemp milk of your choice)
  • 1/2 banana

Directions

Add all ingredients in a high-powered blender and blend on high for 45 – 60 seconds until smooth.
