Smart Sweet: Apple Crumble with Ginger Ice “Cream”

The holiday dessert season has left the station and there is no turning back. Even as I sit here writing, snuggled under a blanket, I am having visions of pumpkin spice lattes and hot chocolate.
I’m a firm believer that just because it’s the holiday season doesn’t mean we have to derail our healthy eating habits. Here is a dessert worth giving thanks for, it is a dessert the whole family will love and best of all, you won’t feel bad for serving!

It contains fruit, healthy fats, warming spices and the most important ingredient for this holiday: love.

Ingredients

Filling:

  • 4 green apples, cored and sliced
  • 2 tbsp (30 ml) of lemon juice
  • 1/4 cup (60 ml) of pure organic maple syrup
  • 1 – 2 tbsp cinnamon, more or less as preferred
  • Pinch of ground cloves
  • 1 tsp vanilla extract

Crumble:

  • 2 cups (240 g) almond meal (left over from making almond milk)
  • 2 – 3 tbsp cinnamon
  • 1 tbsp coconut sugar
  • 1 tsp nutmeg, cardamom, and ground clove combined
  • 1 heaping tbsp raw honey
  • 1 tbsp coconut oil 

Ice Cream:

  • 2 frozen bananas
  • Pinch of ground cloves
  • 1 inch (2.5 cm) piece of ginger
  • 1 tsp vanilla extract

Directions

  1. Preheat your oven to 350 F/177 C.
  2. Combine all of your filling ingredients into a large bowl until evenly coated and then spread out onto a baking dish.
  3. Mix all of your dry ingredients for the crumble together in a bowl.
  4. Once mixed, fold in the coconut oil and the honey and combine until it becomes crumbly.
  5. Top the apples with the crumble and place in the oven for 18 minutes (check at 12 minutes).
  6. If you want to get creative you can top with raisins or cranberries or anything you want –  have fun with it!
  7. While your crumble is doing its thing in the oven, you can prepare the ice cream by adding  all ingredients to a blender or food processor and blend until smooth and creamy.
  8. This process can take a while and you will have to pause often to push down the sides. But, be patient, it will happen.
  9. Once everything is finished plate, share and enjoy!
