Seasonal: Roasted Golden Beets
I recently lost 60 pounds over the past year and a half, all without counting calories or points. Just a few simple changes made all the difference:
* cutting out sugar
* adding veggie juices
* eating smaller portions (eating just an extra 100 calories a day can lead to a 10 pound weight gain per year!!)

One snack I love to place in my Simple Portions Bowls are the Roasted Golden Beets!
Ingredients:
1.) Preheat oven to 400 degrees.
2.) Cut off stems and peel beets.
3.) Cut in half, then thinly slice them, about 1 mm thick.
4.) In a large bowl, toss the sliced beets in the olive oil and cumin.
5.) Lay the beets flat in a single layer on a baking sheet (or two), lined with tin foil.
6.) Bake for 25 minutes, flipping halfway through.
7.) Enjoy them warm or cool/crispy!

What synchronicity…today I just made some roasted veggies with golden (orange) beets. I purchased them at Whole Foods. Anyway, I will try this recipe & am so glad you posted it – here’s mine: I peeled two medium sized beets and one turnip & cut them into bite-sized chunks. I put them in a bowl with a few handfuls of green grapes & tossed all w/about 2 TBSP of Grape Seed Oil. I turned them out on a parchment-lined cookie sheet & seasoned with a bit of kosher sea salt, basil, onion powder, and tarragon. 350 degree oven for about 1.5 hrs, stirring them about every half hour or so. After about an hour, I drizzled them with some apple cider vinegar. TURNED OUT FANTASTIC!!!

Enjoyed this one! I need to get better at thinner slices – the ones I got right were PERFECT. The only thing I added was a little tarragon, because Maggie’s recipe reminded me how much I enjoy that herb. Now I don’t need to get packaged “healthy” chips. Thanks, Kelly.
Thank you so much for the Healthy chip recipe. Can’t wait to make them, they sound so delicious. I’m on Day1 of my reboot. Hope to do the 10 day juice fast, need to get moving and get healthy. My husband and I have started taking little steps to improve our diet. Juicing most mornings and watching portion control. One day at a time, found Joes TV programme so inspirational!
Have been afraid to try beets, but am trying to try a new vegetable each week. This recipe was great. My husband liked it. I added some turmeric also. Question, what is the purpose of the foil? I used it, but I hate using foil when I could cook straight in the pan.
