In the Reboot Kitchen: Peaches ‘N Cream Smoothie (& Popsicle!)

I love blending up sweet treats with my kids that are packed full of fiber and nutrients plus free from processed sugars and artificial ingredients.  Besides a refreshing smoothie, this peaches ‘n cream blend is perfect for popsicles. This sweet but light smoothie is refreshing and energizing.  Peaches, like bananas, are a really good source of potassium.  Diets that include plenty of potassium rich fruits and vegetables have been shown to help lower blood pressure and are perfect for replacing electrolytes lost through sweat and exercise on a hot summer day.

Ingredients

  • 1 peach
  • 1 banana
  • 1 tbsp chia seeds
  • 8 oz (250 ml) unsweetened coconut milk
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla (optional)
  • 1/4 tsp honey (optional)
  • Ice

Directions

  1. Wash peach, chop and remove pit.
  2. Peel banana.
  3. Add peach, banana, chia, ice, cinnamon, vanilla and honey to blender.
  4. Blend on high until smooth, about 45 – 60 seconds.
  5. Garnish with cinnamon and chia. Enjoy! (If making popsicles, pour smoothie into popsicle holder and freeze overnight.  Run under warm water to remove from mold.)
