Meatless Monday: Watermelon Avocado Pizza

This past weekend a few friends and I decided to soak up the summer’s heat with an outdoor BBQ. While attempting to keep it on the healthy side (since it’s easy for BBQ’s to be just the opposite), I brought a little snack for everyone to fill up on while we waited for the main course to cook on the grill. Enter watermelon sliced with fresh avocado, basil, olive oil and Himalayan salt! It was so refreshing, so simple and so light so it held us over without getting too full. Have this for an appetizer or even as a light dinner with a juice!

Ingredients

  • 1/2 watermelon
  • 1 avocado
  • 20 – 30 basil leaves
  • 1 – 2 tbsp  olive oil
  • Dash of Himalayan salt

Directions

  1. Slice watermelon into 3 or 4 circular slices.
  2. Cut avocado into thin slices and place on each watermelon circle.
  3. Add basil, drizzle of olive oil and sprinkles of Himalayan salt to each watermelon.
  4. Slice into 6 slices each and serve!
