Joe’s Journal: Day 43 – Kale’s Biggest Fan

I’m always talking about my Mean Green Juice. You’d think I’d be sick of it now but I’m not. I actually look forward to it every day!

One reason I love it so much is because I put kale (Tuscan cabbage) in it. Now 43 days ago I would not be saying/writing this. I was not a lover of vegetables of any kind, let alone of a veggie like kale. But I’ve come to consider kale one of my go-to veggies for a number of reasons.

First, it’s got a strong, distinctive taste that packs a wallop and can be used in a variety of ways. That’s why it’s one of the cornerstones to my Mean Green! But the second reason I have become such a huge kale fan is that it is a “superfood” like few others. Kale is a powerhouse that offers an incredible array of healthy benefits that go well beyond even its incredible nutrient value. It’ is rich in antioxidants and sulfur-containing phytonutrients. It contains something called glucosinolates and methyl cysteine sulfoxieds, which work to help activate detoxifying enzymes in the liver, which in turn play a role in neutralizing carcinogens. It is filled with vitamins and minerals and contains protein and omega 3 fatty acids.

There have been lots of studies done on this special veggie. It’s been found to contribute to the most sustained weight loss ever recorded in medical history, lowering cholesterol, reducing risk of cancer, slowing loss of mental function, and so much more.

I reckon I’m kale’s biggest fan.
