In the Reboot Kitchen: Coconut Chia Smoothie

Now that it finally feels like summer here in the U.S. I’ve been on the lookout for a light and energizing smoothie. One that tastes good on a hot day and gives me the boost I need to make it through the city’s (sometimes sweltering) heat. After a few rounds of experimenting in the kitchen I think I finally nailed it. It’s light in taste and texture so it won’t leave me feeling super full but it leaves me full of nutrients.

The Coconut Chia Smoothie is extremely energizing, thanks to the chia seeds and coconut oil, it’s loaded with phytonutrients from the hefty handful of spinach, it’s a great post workout drink with the added protein from the hemp seeds, and tastes perfectly sweet thanks to the fiber filled dates and touch of vanilla extract.

Ingredients

  • 1 cup (236 ml) almond milk
  • 1/4 cup (60 ml) coconut water
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 2 dates, pitted
  • Large handful of spinach
  • 1/2 tsp of vanilla extract
  • 2 – 4 drops of stevia (optional)
  • 1 tsp coconut oil
  • 4-6 ice cubes

Directions

  1. Add all ingredients to high powered blender and blend until smooth, about 45 – 60 seconds.
  2. Top with hemp seeds for an extra crunch (that’s what you see on the spinach in the picture!)
  3. Serve over ice for an even more cooling drink!
