Fresh Sugar-Free Strawberry Lemonade

I am so excited about a few things: 1) Sweet organic strawberries are back in season and more affordable at the grocery store, 2) It’s lighter so much later into the evening these days, and 3) My cookbook is almost done. I will definitely keep you posted on when you can pre-order a copy. For now… let’s celebrate with Strawberry Lemonade!

I love this because it’s all juice. Some strawberry lemonade recipes call for THREE cups or more of white sugar. Mine has zero.  And yetit is perfectly (and delightfully) sweet.

There’s even veggies hidden inside — like parsnips and cucumber, but no one will ever know! They will just wonder how you made such a delicious drink and want the recipe for their next summer barbeque.

Ingredients

  • 12 strawberries
  • 2 large lemons
  • 2 pears
  • 3 parsnips
  • 1 cucumber, peeled (For an even brighter, more vibrant pink color than mine, be sure to PEEL your cucumber before juicing it)

Directions

  1. Wash all produce.
  2. Put strawberries and pears through juicer first. Juice the remaining ingredients.
  3. Enjoy cold with a few ice cubes!
  4. Don’t let your pulp go to waste. Use it to make this fabulous Strawberry Balsamic Dressing to top a spinach salad. Read more from Nosh and Nourish.
