Dark & Stormy Juice

I was loving the look of the red kale in the markets so I had to grab a bunch to juice and cook with this week. Kale and other cabbage family vegetables contain a naturally occurring compound called  sulforaphane which has potent anti-cancer properties and it also aids in liver detoxification pathways. Kale is an excellent source of minerals, vitamin A, K and anti-oxidants. Enjoy!

Ingredients

  • 8 red kale leaves
  • 1 large beet (beetroot)
  • 1 bunch of parsley
  • 2 celery sticks
  • 1 lemon

Directions

  1. Wash all produce well.
  2. Peel lemon and beet (optional).
  3. Juice all produce and enjoy!

Servings: 1

Serving Size: 16 - 18 oz (500 ml)

Substitutions

  • Red kale – kale, spinach, lettuce
  • Beet – carrot, sweet potato, radish, red cabbage
  • Parsley – mint
  • Celery  – zucchini, celeriac
  • Lemon – lime, grapefruit
