Community Recipe: Pomegranate Smoothie

Picture this. You’re on a Reboot and you’ve been consuming the same juices, smoothies and veggies for the past few days, and you’re wanting something new. You walk into your kitchen and all of a sudden you’re creative juices start flowing, you start combining different fruits and vegetables, and then something magical happens. You’ve just created a masterpiece (aka a delicious meal). Have you ever been in that scenario before?
That’s exactly what happened to one of our 15 Day Guided Reboot participants last week. Greg combined pomegranates with avocado and other fresh produce and it resulted in a refreshing, delightful smoothie. When he shared the recipe with his fellow Rebooters, it sounded too delicious to not give it a try in our own Reboot Kitchen, and it was a hit!

Ingredients:
1/2 cup pomegranate seeds (frozen or fresh)
1 cup frozen blueberries
1 handful of spinach
1/2 avocado
8 oz. (250 mls) coconut water
Directions:
Add all ingredients into high-powered blender and blend until smooth, about 45-60 seconds.

I made this and it tasted great, BUT- I found that the pomegranite seeds were AWFUL in a blender-the drink tasted amazing, but the small bits of grounded seed were terrible. I literaly drank it at the sink so I could keep spitting out the tiny bits of seed. All you could hear was “ping, ping, ping” as the seeds flew out of my mouth and hit the top of a stainless steel pan in my sink..LOL..I think perhaps juicing the pomegranite seeds, then adding that juice in would be better. I love eating the seeds themselves, but when you grind them up in a blender it doesn’t work well. (for me anyway-my hubby didn’t seem to mind as much)
I just made a pomegranate and blueberry smoothie yesterday! I highly suggest you blend the pomagranate alone in a vitamix or other blender and then run through a small mesh sieve before adding other items. This will reduce the juice a bit, but take out most of those grainy seeds that would otherwise feel like eating sand!! Also as far as opening a pomagranate, wash, cut the top off to slightly expose the seeds, then use the natural dividers to open in sections like an orange. Use patience and you won’t make too much of a mess. Remember the juice stains, so don’t wear white! LOL!
This is one of the best tasting smoothies that I’ve ever made. I will definitely blend the Pomegranate seeds first and strain them next time I make this!!
I guess I am just used to eating Pomegranates so the tiny seed pieces didn’t bother me. I have a Vitamix so the seeds were very tiny almost like a blackberry seed. Glad everyone enjoys it.
