This juice contains high amounts of lycopene, carotenes such as lutein and zeaxanthin, anthocyanins, potassium, and pectins which are shown to have many health promoting benefits in the form of soluble fiber such as a decrease in heart disease and LDL “bad” cholesterol.

Now that it finally feels like summer here in the U.S. I've been on the lookout for a light and energizing smoothie. One that tastes good on a hot day and gives me the boost I need to make it through the city's (sometimes sweltering) heat. After a few rounds of experimenting in the kitchen I think I finally nailed it. It's light in taste and texture so it won't leave me feeling super full but it leaves me full of nutrients.
