A Soup that Brings Sunshine: Sweet Potato, Carrot & Turmeric

Thanks to my Community Shared Agriculture share I have lots of wonderful, seasonal and organic produce that helped me come up with this delicious soup. This soup is not only tasty with a hint of sweet and a slight spice from the ginger, but it’s versatile as you can add your own favorite fresh or dried herbs and spices to finish it off. Enjoy the recipe.

A Seasonal Soup: Turnip, Apple & Butternut Squash

There’s nothing better than an easy-to-make, delicious fall soup. This soup was made entirely with organic produce from my Community Shared Agriculture “CSA” share and features delicious butternut squash that is rich in beta-carotene and vitamins A and C, which help to boost immunity and fight off the flu and cold this season.

Coconut Cauliflower-Kale Puree

When kale had its big holiday last week (National Kale Day) and the whole office was bringing their favorite kale dishes, I knew it was a perfect opportunity to get cauliflower into the spotlight as well. So I made this anti-inflammatory, heart healthy, vitamin rich soup that everyone loved! Enjoy the recipe.

Dinner Idea: Spiced Red Pepper & Lentil Soup

It’s getting colder here in Australia so warming meals are what’s cooking in the kitchen. This soup is easy to throw together and the peppers break down nicely to give it a rich, strong flavour along with potent spices. Enjoy!

Victoria Moran’s Raw Shangri-La Soup

Victoria Moran shares a raw soup recipe that is named for the legendary land of eternal youth. She says she has seen a high-raw, plant-based diet attribute to youthfulness in many people and a raw soup is an excellent way to enjoy both. Enjoy the recipe.

Warm Up Your Winter with a Spicy Roots Soup

Living in Chicago has been COLD this winter. The negative temperatures have sent me home at the end of the day looking to warm up with a comforting meal. Stick to your healthy resolutions with this fabulous meatless meal to add some spice and kick to your week. Enjoy the recipe!

Meatless Monday: Whipped Roasted Cauliflower and Onion Soup

Comfort comes from a desire to be soothed in whatever way we yearn; be that warmed when we are cold, satisfied when we are hungry or settled when we are feeling ill. Nothing touches all those needs for me like a cozy bowl of soup! Especially Whipped Roasted Cauliflower & Onion soup. It’s thick, creamy and satisfying AND only requires 5 ingredients. What is better than that for a chilly, winter night?

Meatless Monday: Creamy Parsnip Soup

Ah, parsnips. Perhaps one of the most undervalued and underused vegetables, in my opinion. Packed with vitamin C, folate and fiber, this white root vegetable makes this soup seem like there is cream in it but it’s completely vegan, dairy-free and gluten-free. Enjoy!

Coconut Thai Butternut Squash Soup

Enjoy this Thai twist on butternut squash soup with the flavors of coconut and curry. It’s super nutrient-dense, low calorie, and quite filling making it a perfect dinner for a cold, snowy night. Enjoy the recipe!

Meatless Monday: Sweet Potato Chickpea Chili with Quinoa

Sweet potatoes, chickpeas and quinoa are a few pantry staples for healthy eaters, and now’s your chance to enjoy them all at once! This Sweet Potato Chickpea Chili with Quinoa is a nutrient-dense, fiber-filled, delicious meal that will not only please many palates but it will make your entire home smell satisfyingly sweet.

One of my favourite smoothies whilst I was pregnant was an avocado cilantro (coriander) smoothie, so I decided to make it again, and added mango! This smoothie is a great combination of some of my favorite fruits and vegetables and a perfect way to include the wonderful nutritional benefits of cilantro with loads of electrolytes!
