Meatless Monday: Whipped Roasted Cauliflower and Onion Soup

Comfort comes from a desire to be soothed in whatever way we yearn; be that warmed when we are cold, satisfied when we are hungry or settled when we are feeling ill. Nothing touches all those needs for me like a cozy bowl of soup! Especially Whipped Roasted Cauliflower & Onion soup. It’s thick, creamy and satisfying AND only requires 5 ingredients. What is better than that for a chilly, winter night?

Meatless Monday: Creamy Parsnip Soup

Ah, parsnips. Perhaps one of the most undervalued and underused vegetables, in my opinion. Packed with vitamin C, folate and fiber, this white root vegetable makes this soup seem like there is cream in it but it’s completely vegan, dairy-free and gluten-free. Enjoy!

Meatless Monday: Roasted Pepper & Red Quinoa Soup

Warm, spicy dishes are perfect for chilly, rainy fall New England days. We visited a local farm last week and I couldn’t wait to cook up some of the fresh veggies we got like hot peppers, tomatillos and cherry tomatoes; all rich in vitamin C and other immune supporting phytonutrients. Roasting the veggies first brings out rich flavors and texture. I love making soup because we have plenty of leftovers for a quick lunch the next day.

I love salads all year round, no matter what the weather is like, and this is one of my favourites. The strawberries give the salad a sweet lovely taste among the healthy greens combined with the crunchy texture from the lightly toasted nuts. The touch of basil completes it perfectly!
