Cardio Carrot Ginger Dressing Recipe by Andrea Beaman

As part of our excitement for Andrea’s presentation, we would love to share one of her amazing Reboot-friendly recipes. Salads are an excellent part of a healthy lifestyle, but sometimes the dressings we choose can sabotage the nutrients. Here is a healthy, homemade salad dressing you can use on your favorite salad!

Directions:

Ingredients

  • 1 small onion, peeled and diced
  • 4 carrots, grated
  • 2 inches (5 cm) ginger, peeled and minced
  • 1/3 cup (75 ml) flax oil
  • 1/4 cup (60 ml) apple cider vinegar
  • 1/2 cup/120 ml) apple juice
  • 1 tbsp stoneground mustard
  • 2 tbsp shoyu or ½ tsp
  • sea salt
  • water (for desired consistency)

Directions

Combine all ingredients in a food processor or blender, and process until desired consistency is formed. Add more or less water depending on how thick or thin you prefer. Start with ½ tsp and gradually add as desired.
